Hi! I’m a mom, a Crossfitter, a Paleo eater (who eats goat & sheep dairy) and a student.
Paleo eating helped me lose over 40 lbs.
Taking the advice of Sarah Fragoso at Everyday Paleo, I bought two Planet Boxes, one for me and one for my daughter, who began school in the fall.
And so, my lunch box journey began. I hope you’ll find my lunch boxes helpful!
Where did you find the lunch pale? What recipe do you use for bread? Great ideas! Thank you for posting
I like the Elana’s Pantry Paleo Bread recipe: http://www.elanaspantry.com/paleo-bread/
Thanks for your comment!
Also, the lunch pale is a Planet Box, which you can order from: http://www.planetbox.com
Your blog is great and I love that you’re setting such a good example for your kiddo by showing them that having a family doesn’t mean you can’t continue your education. That’s something to be really proud of.
Thank you for the lovely comment. It came right while I was in final exams and hadn’t spent quality time with my daughter for several days, so it really gave me a boost! Juggling being a student with being a parent is the hardest thing I’ve ever done, but I have no doubt it will be worth it in the end (at least I hope it will be!).
How do you mange anything that needs re-heated with the PlanetBox Rover system? A hot lunch is one thing I frequently need to get me going.
That’s the only problem with the PlanetBox. You can’t microwave them. I generally don’t have microwave access at lunch time, but if I do and I want to bring a hot lunch, I bring a separate container (I usually save containers when we order coconut curries from our local thai place and bring those with). Alternately, there are many other sustainable/reusable lunch box systems that are microwave-safe, such as Laptop Lunches, which are microwave safe: http://www.laptoplunches.com. I’m actually about to post about microwave safe lunch boxes….
